Glace Icing Recipe

Ingredients

Glace Icing Recipe

Ingredients
100g (4oz) icing sugar - sieved
15ml spoon (1tbsp) water
This recipe is sufficient to cover 18cm cake

Method
Mix sieved icing sugar with water in a basin. Beat until smooth, add colour and flavouring as required. The icing consistency needs to be thick enough to coat the back of the spoon. If it's too thin add a little more sieved icing sugar, if it's too thick add a few more drops of water. Remember to do it little by little.

Variations
Orange/Lemon Glaze Icing
Replace the water with Orange or Lemon Juice or undiluted squash for a strong flavour. For something a little more subtle try substituting only half of the water with juice.
Chocolate Glaze Icing
Sieve 2 x 5ml spoons (2 tsp) of cocoa powder with the icing sugar before mixing with the water.

Coffee
Replace the water with strong black coffee.
For something a little more subtle try making a mocha icing using part chocolate and part coffee.

The Cupcake in the picture was iced with an icing very similar to glace icing, we used Fondant icing.
This comes as a dry powder icing, it looks like icing sugar, mix it like glace which gives the icing an extra glossy sheen.
When ready colour as required and pour on to your cupcakes.

Fondant icing is like the icing on Mr Kipling's Fondant Fancies, soft but not wet to the touch. This drier surface is great for decorating on.
